Coconut Flour Muffins are flavorful, simple to make and are perfect for a quick snack! Not only are these easy muffins delicious, but they are also Gluten Free, Dairy Free, Grain Free, Keto and Low Carb.
The sweet coconut flavor that you get in every bite is out of the ordinary! They are so delicious they almost taste more like a dessert. So anytime you can basically eat guilt-free dessert for breakfast, you know it’s going to be a good day. You can add your favourite berries/fruit and experiment with various combinations!
Ingredients:2 tbsp Butter/oil
½ cup Coconut flour - The only flour I am using for these muffins is coconut flour, and it’s the perfect texture and flavor.
3-4 tbsp Jaggery Powder
1.5 tsp Baking powder - This will give your coconut muffins the perfect rise
1.5 tsp Vanilla Extract - A little bit of vanilla gives the muffins even more flavor. This is completely optional
200 ml Canned coconut milk
½ cup Dessicated Coconut - Sprinkling in some dessicated coconut gives these muffins even more depth
Instructions:Muffins are very easy to make. Prepare a muffin pan with paper liners, spritz with some cooking spray and preheat the oven to 350 degrees F.
Mix together the butter/oil, coconut flour, jaggery powder, baking powder, vanilla, eggs, and coconut milk together until they are smooth. Then add in the dessicated coconut and any other mix-ins you want to add. You can even add chocolate chips, blueberries, strawberries or nuts – whatever you really like. Evenly place the batter in the muffin cups.
Bake the coconut muffins for 25-30 minutes. They should be golden brown around the edges, and you should be able to touch them with your finger, and they are firm when done.
